Today’s Menu Monday post is about Hearty One Pan Breakfast. I found the recipe here at AllRecipes, but we make it without the bacon. Mr J was super bummed to find out he’s been missing out on bacon all this time.
Apparently someone thinks roast plastic chicken would be an excellent dinner.
Now that the counter is clean, let’s cut up several potatoes.
Cook them for 10-15 minutes so that they are some what soft, but not mashed potato soft.
G thinks that when ever the camera is out, a picture of him is a requirement.
Add a tablespoon of vegetable oil to your frying pan. Add the garlic and onion to the pan.
The original recipe tells you to add all the vegetables at one time but the tomatoes and potatoes break down too quickly for the onions and peppers to get cooked.
And again, saute for a few minutes.
Mix together and cook for 3-5 minutes.
We use 2 eggs per person but how many eggs you use is up to you.
Cover and cook until the eggs reach the desired firmness. We like our yolks pretty runny but our white’s fairly firm.
This is a pretty popular dinner, no Macaroni and Cheese, but still a crowd favorite.
Hopefully there will be a Farm Friday post, since the weather is supposed to be more cooperative the rest of the week, than it was this weekends.
Hearty One Pan Breakfast
Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
Add the onions, peppers, garlic, tomatoes, and potatoes. Season with salt and pepper and cook until vegetables are soft, about 5 minutes.
Sprinkle vegetable mixture with cheese. Crack eggs into the pan a couple of inches apart. Cover pan and allow eggs to cook to desired firmness. Remove pan from heat and serve.
